Low-Carb Apple Dumplings

Apple Dumplings

This low carb makeover of traditional apple dumplings will leave you wanting more.

Tender wedges of apple are wrapped in a crispy dough and snuggled in a rich and sweet sauce. Add some delicious ice cream on the side, to really bring this dessert together!

INGREDIENTS:

1.5 apples

1 can of sugar-free lemonade

Dough:

6 ounces of mozzarella

1 ounce of cream cheese

1.5 ounces of Sukrin Sunflour

1.5 ounces of almond flour

1 egg

½ teaspoon of cinnamon

1 teaspoon of xanthan gum

Sauce:

8 ounces of butter

1 cup of Sukrin Gold

1 teaspoon of vanilla

1 teaspoon of cinnamon

METHOD:

Pre-heat your oven to 350⁰ F, fan forced

Place the sauce ingredients into a small pot and heat over medium heat until the sauce has melted, stirring occasionally to combine, sit aside.

Peel and core your apple and cut into 1/8th wedges (12 wedges in total)

To make your dough, place the mozzarella and cream cheese in a microwave safe bowl and heat on high for 1 minute.

Remove and stir. Repeat in 30 second bursts until smooth and melted.

Combine the flours, sweetener and cinnamon in a bowl and whisk to remove lumps.

Add the dry ingredients, and the egg, to the cheese mixture and mix well until a dough forms.

Tip out and knead gently until smooth.

Roll out into a rectangle between two sheets of baking paper.

Cut into 12 triangles.

Place an apple wedge on the wide end of each triangle and roll up.

Sit the wrapped wedges in a baking dish and pour the sauce mixture over the top.

Lastly, gently tip the can of sugar-free lemonade over the entire dish.

Bake for 45 minutes.

This dish is best eaten straight away.
