Florentines are the most delicious treat. Crispy almonds surrounded by a slightly fruity melt-in-your-mouth toffee.

What a pity that you can’t have them when you enjoy a low carb or sugar free lifestyle.

INGREDIENTS:

2 cups of flaked almonds

2 egg whites

1 teaspoon of orange zest

2/3 cup of Sukrin Gold

4 oz. of sugar-free dark chocolate

METHOD:

Pre-heat oven to 300 degrees Fahrenheit.

Combine all of the ingredients, except for the chocolate, in a mixing bowl.

Mix well to combine. You want the flakes of almond to be well coated.

Line a baking tray with silicone paper and drop spoonful’s of mixture onto the tray.

The Florentines will spread so leave planty of room.

Using the back of a spoon dipped in water, gently spread the mixture out into a single layer.

Bake for approx. 25 minutes but keep an eye on them after 15 minutes because they can easily burn.

Remove from the oven and sit n trays for 5 minutes, then transfer to cooling rack.

Melt the chocolate in a double boiler.

Brush a thin coating onto the base of each Florentine.

You can eat them just like that but I like to also drizzle some chocolate over the top.

AND I recently learned that you can also sandwich two together with a chocolate filling.

My macro calculations are based on 12 Florentine sandwiches.

Store, in an airtight container for up to 7 days
