No-Bake Strawberry Cheesecake Bars

This Swap Out Saturday we used our Sukrin Monk to make super easy No-Bake Strawberry Cheesecake!




1 stick unsalted butter

2 tablespoons Sukrin Monk

2 cups shortbread crumbs


Cheesecake Filling:

2 8 ounce packages of cream cheese

1 cup whipped cream

1 teaspoon vanilla extract

1 cup Sukrin Monk

1 1/4 cup sliced strawberries





  1. Whisk together shortbread crumbs, Sukrin Monk and melted butter in a bowl
  2. Press and spread mixture into the bottom of a prepared cooking pan
  3. Refrigerate until firm

Cheesecake Filling:

  1. Mix together the cream cheese, Sukrin Monk, vanilla extract and strawberries in a bowl until smooth
  2. Add in half of the whipped cream and mix until combined then add the rest of the whipped cream
  3. Pour filling over chilled crust, spread and smooth
  4. Freeze for at least 4 hours
  5. Cut into bars and top with strawberries
