No-Bake Strawberry Cheesecake Bars
This Swap Out Saturday we used our Sukrin Monk to make super easy No-Bake Strawberry Cheesecake!
Ingredients:
Crust:
1 stick unsalted butter
2 tablespoons Sukrin Monk
2 cups shortbread crumbs
Cheesecake Filling:
2 8 ounce packages of cream cheese
1 cup whipped cream
1 teaspoon vanilla extract
1 cup Sukrin Monk
1 1/4 cup sliced strawberries
Instructions:
Crust:
- Whisk together shortbread crumbs, Sukrin Monk and melted butter in a bowl
- Press and spread mixture into the bottom of a prepared cooking pan
- Refrigerate until firm
Cheesecake Filling:
- Mix together the cream cheese, Sukrin Monk, vanilla extract and strawberries in a bowl until smooth
- Add in half of the whipped cream and mix until combined then add the rest of the whipped cream
- Pour filling over chilled crust, spread and smooth
- Freeze for at least 4 hours
- Cut into bars and top with strawberries
