Perfectly minty, with a rich and creamy center surrounded by dark chocolate, these peppermint patties are the ultimate way to eat more healthy fats.

This recipe makes 12 large patties, but could easily be made into 24 smaller ones.

INGREDIENTS:

½ cup coconut oil

2 tablespoons heavy cream

½ cup Sukrin Icing

½ teaspoon peppermint stevia drops

1-2 teaspoons peppermint extract

½ teaspoon vanilla

1 teaspoon of vanilla extract

 

1 cup sugar free dark chocolate chips

1 teaspoon coconut oil

 

METHOD:

Place the coconut oil, Sukrin Icing, stevia drops, peppermint extract, and cream in the bowl of a stand mixer and beat until soft and fluffy.

Add the vanilla and 1 teaspoon of vanilla extract.

Taste and add more peppermint extract, if required.

Line a tray with baking paper and use a spoon or ice cream scoop to measure 12 equal mounds onto the tray.

Use the back of your spoon to flatten the mounds and smooth the edges.

Freeze for 30 minutes.

Meanwhile, melt the chocolate, along with the extra teaspoon of coconut oil, in a heatproof bowl over a pot of simmering water.

Use two forks to lower each patty into the chocolate, draining off excess and then placing it on the tray.

Repeat until they are all coated and then chill to set.

Use the leftover chocolate to drizzle a pretty pattern over the top of the set patties.

 

Store these patties in a covered container, in the fridge.
