Cookie Monday – Thin and Crispy Caramel Cookies

Mondays can get a little bit kooky, so we thought: why not make it less so with some cookies! All December we will be giving you a new cookie recipe to make your Mondays less bitter.

This week’s recipe gives you a very easy to make Caramel Cookie! Thin and filled with that sweet caramel flavor, this will be a new favorite around the house.



100g of butter

80g of Sukrin Gold 

1/2 cup of Sukrin Syrup Gold 

120g of thin, rolled oats

4 tbsp of Almond Flour



  1. Preheat the oven to 320 F.
  2. Line a baking sheet with parchment paper
  3. Mix and melt all ingredients in a saucepan.
  4. Split batter into 16 thin dollops and place on baking sheet.
  5. Bake for 7 minutes.
  6. Cool on rack and serve.
