Sweet and Spicy Bacon Wrapped Chicken Bites

These bites are sooooo good! They are the perfect mix of sweet, spicy, smoky and salty.

Perfect to put out for nibbles, with a bowl of ranch to dip in, or some sugar-free bbq sauce.

Or, divide them into portions and add a side salad for a delicious easy dinner.

Or, hide in the kitchen and eat them like moreish popcorn…

INGREDIENTS:

2 pounds of chicken breasts, skinless and boneless

1 ½ pounds of bacon – try to get thin bacon, smoked if possible

1 cup of Sukrin Gold

½ teaspoon of ground cumin

1 teaspoon of garlic powder

1 teaspoon of onion powder

½ teaspoon of cayenne pepper

1 teaspoon of smoked paprika

Toothpicks

 

 

METHOD:

Preheat oven to 350⁰F conventional.

Line large baking trays with foil and sit baking racks over the top (this allows the bites to crisp up evenly all over)

Mix the dry ingredients together in a bowl.

Cut the chicken breasts into bite-sized pieces, approx. 1-inch pieces

If your bacon is thick, place it between sheets of silicone paper and pound thin with a rolling pin or meat mallet.

Count the bacon and, if required, cut each rasher in half to match the number of bites.

Wrap a slice of bacon around each chicken bite and secure with a toothpick, if required. Otherwise, place the bite seam-side down.

Continue until all bites are wrapped.

Roll each bite in the dry mix until coated and place on the baking trays.

Bake for 35-45 minutes, depending on the size of your bites, until each bite is crisp and golden.

 

Store in the fridge, in a covered container, for up to 5 days.
