Low Carb Granola – Sweet & Crunchy

Do you just love the crunchy, crispy clusters of granola – but have given up on them because they’re usually based on sugar and grains? The Sukrin Fiber Syrup Gold makes it possible to create a low carb granola – crunchy and crispy – that tastes even better than the store bought! Made from all natural ingredients, this delicious granola is easily varied to your taste. We added sugar free dried cranberries but goji berries or blueberries would also be nice options. The granola will keep for several weeks in an airtight container. Lovely with a full fat yoghurt and makes a really nice topping for ice cream.

 

Ingredients

2 cups of nuts – We used almonds, pecans and hazelnuts

1/4 cup flax seeds

1/2 cup sunflower seeds

1 cup shredded coconut/coconut flakes, unsweetened

5 Tbsp Sukrin Fiber Syrup Gold*

2 tsp cinnamon

1 tsp ground vanilla bean

*The crunchy effect is created by the syrup. A granulated sweetener is NOT a suitable replacement

 

Chop the nuts coarsely, mix all the ingredients together and place on parchment paper on a cookie sheet. Make sure it is spread out. Bake in pre-heated oven at 375 degrees for approximately 10 minutes. KEEP AN EYE on the granola – it browns very fast! The granola “crisps up” when it cools. Let cool totally before transferring to a suitable jar.
