Cookie Monday – Low-Carb Chocolate Cookies

Mondays can get a little bit kooky, so we thought: why not make it less so with some cookies! All December we will be giving you a new cookie recipe to make your Mondays less bitter.

For our final Cookie Monday we’re offering this delicious Low-Carb Chocolate Cookie recipe! Gluten-free, high in protein, and sugar-free these are the perfect treat for anybody looking to start the New Year differently!

 

Ingredients: 

50g of Sukrin Defatted Almond Flour 

50g of Sukrin FiberFin 

4 tbsps. of unsweetened cocoa powder

3/4 tsp. of baker’s ammonia

3/4 tsp. of salt

150g of Sukrin Monk Fruit

2 eggs

25-30g of butter

1 tsp. of vanilla powder

 

Directions: 

  1. Preheat oven to 350 F
  2. Line a baking sheet with parchment paper.
  3. Mix dry ingredients using a food processor, add in the eggs and butter. Run until cookie dough is mixed.
  4. Using two spoons, place small dollops of cookie dough onto baking sheet.
  5. Bake for 10 minutes.
  6. Cool and serve.
