Mondays can get a little bit kooky, so we thought: why not make it less so with some cookies! All December we will be giving you a new cookie recipe to make your Mondays less bitter.
For our final Cookie Monday we’re offering this delicious Low-Carb Chocolate Cookie recipe! Gluten-free, high in protein, and sugar-free these are the perfect treat for anybody looking to start the New Year differently!
50g of Sukrin Defatted Almond Flour
50g of Sukrin FiberFin
4 tbsps. of unsweetened cocoa powder
3/4 tsp. of baker’s ammonia
3/4 tsp. of salt
150g of Sukrin Monk Fruit
25-30g of butter
1 tsp. of vanilla powder
- Preheat oven to 350 F
- Line a baking sheet with parchment paper.
- Mix dry ingredients using a food processor, add in the eggs and butter. Run until cookie dough is mixed.
- Using two spoons, place small dollops of cookie dough onto baking sheet.
- Bake for 10 minutes.
- Cool and serve.
